Why orange?
The orange in carrots, sweet potatoes and pumpkins comes mostly from
beta-carotene and related carotenoids. Your body converts beta-carotene
into vitamin A as it needs it — so you can’t overdose on it from food.
Citrus fruits add vitamin C and flavonoids like hesperidin.
Carotenoids are fat-soluble: eat orange vegetables with a little olive oil,
nuts or seeds, and cooking them lightly helps too
