A kingdom of their own
Button, chestnut, shiitake, oyster and portobello mushrooms are fungi. They’re low in calories but bring B vitamins (riboflavin, niacin, pantothenic acid), selenium, copper and fibre.
The vitamin D trick
Like us, mushrooms make vitamin D when exposed to UV light. Mushrooms sold as “UV-treated” contain much more — and you can boost them yourself: Sun your mushrooms.
Tips
Cook them — cooking improves their texture and makes their nutrients easier to absorb. Their savoury, umami flavour makes them a great swap for meat in sauces.
