The hack
Mushrooms contain ergosterol, which UV light turns into vitamin D2. Most supermarket mushrooms are grown in the dark and contain very little — but you can change that.
Do this
- Slice mushrooms and lay them out gill side up.
- Leave them in direct midday sunlight for 15–60 minutes.
- Cook and eat them as usual — the vitamin D stays put.
Or buy mushrooms labelled “UV-treated” / “high in vitamin D”.
Keep in mind
Sunned mushrooms are a helpful extra, not a guaranteed source. In winter or if you rarely get sun yourself, a vitamin D supplement is the reliable option — see Vitamin D.
